The experience

The flavors that take us back to childhood memories taste good, taste of home, of the smiles of grandmothers and grandfathers who skillfully knew how to impress palates with little or nothing. Few ingredients, often poor, made up the dishes of the ancestors’ cuisine. But it is in the simplicity and artistry of using and dosing the right ingredients that every palate yields to emotion.

ROOTS TO TASTE – journey into the flavors of home is an immersive roots workshop exploring the traditional dishes of Friuli Venezia Giulia.

The activity consists of a cooking – show and interactive moment in which you can watch the creation of a typical traditional dish masterfully executed by an expert in traditional cuisine and food and wine products: the entire regional territory is very rich in traditional dishes and typical products. Absolute king in the kitchens of our region is frico with polenta; but let us not forget the jota, the poor minister of potatoes, cabbage and beans; the brodeto alla graisana, Grado’s typical fish broth; the plum dumplings, first course or dessert, typical of border areas; the cjalsons, the typical stuffed Carnic ravioli; Gubana, Presitz and much more, not forgetting the products of regional excellence known to the world thanks to all of you, fellow countrymen abroad and descendants of emigrated Friulians.

During the cooking-show, you will be called upon not only to observe but also to actively participate in kneading, mixing, tasting, and trying your hand at executing the recipe.

The activity concludes with the Dinner of Roots: a tasting of typical products and traditional recipes, and a selection of local wines because “cul vin si sta fra amîs, cu l’aghe si lave i pîs” (with wine you are among friends, with water you wash your feet).

The dinner will be accompanied by theatrical and playful interventions led by professional actors. As in the convivial times of the past when neighbors met in the evenings, you will be invited to indulge in play, laughter, joking, and becoming a child again, with games and playful activities handed down to this day from generation to generation.

The entire activity is led by experts in traditional and local cuisine, professional actors and root storytellers.
